TEQUILA REPOSADO CIMARRON DESCRIPTION

Cimarron Tequila Reposado is a Mexican tequila of exquisite expressive breadth, elaborated in the state of Jalisco by the Fonseca family according to traditional artisanal techniques. For four generations, the Fonsecas have dedicated themselves to the cultivation of blue agave in the Atotonilco El Alto area, at dizzying heights of almost 2,000 metres. In general, tequilas can be differentiated according to the type of ageing into: white, if after distillation the product is ready to be bottled; joven, if a small amount of aged tequila is added to the white tequila; reposado, if the distillate undergoes a maturation period of at least 2 months in oak barrels; or añejo, when the tequila is aged for at least one year in oak casks.
Tequila Reposado Cimarron comes from only blue agave grown in Atotonilco El Alto, on the Jalisco plateau, at an altitude of 1689 metres. Processing begins with harvesting the heart (piña) of the ripe agave, rich in sugary juice, which is then subjected to a long cooking process in order to break down the sugars inside. After cooking, the juice obtained is placed in stainless steel tanks where indigenous yeasts carry out spontaneous alcoholic fermentation, followed by a double distillation of the fermented product in copper stills. The subsequent ageing phase takes place in oak barrels previously used for bourbon, in which the distillate remains for 6 months before bottling. Throughout the process, the use of any type of additive is excluded.
Reposado Tequila from the Cimarron production company has a slightly golden colour. The aromas range from notes of aromatic herbs, sweet spices and yellow-fleshed fruit, with roasted and fine woody sensations in the background. Pleasant balance and softness in the mouth, characterised by a long persistence.
