TORBATO 'CATORE' SELLA & MOSCA 2022 DESCRIPTION

Sella & Mosca's Torbato 'Catore' is a Sardinian wine produced in the north-western part of the Sardinian island, not far from Alghero. The winery has a centuries-old tradition behind it and was founded by two investors from Piedmont, in love with the beauty and potential of the Sardinian land. Respect for nature, the ecosystem and biodiversity are cardinal principles that guide the work in the winery on a daily basis, for conscious end products that are the result of painstaking work. Today, the winery's holdings are very extensive and feature indigenous as well as international varieties for a total of around 1,500 different biotypes.

The vineyards of Sella & Mosca's Torbato 'Catore' grow in a predominantly Mediterranean climate with hot, dry summers and mild winters with the constant presence of a sea breeze that influences the harvests not far away. The soil is rich in clay, sand and limestone with sporadic presence of iron for a structured end product. The harvests are managed without the use of pesticides or synthetic chemicals to respect the natural growth and development phases of the plants. The grapes are harvested by hand in the first few days of October; destemming-crushing takes place in the cellar with subsequent 24-hour maceration on the skins. Alcoholic fermentation takes place in steel with selected yeasts, a small part of which ferments with the skins for 100 days and the remainder in new barriques. It matures a few months in the bottle.

Sella & Mosca's Torbato 'Catore' appears in the glass as a straw yellow with brilliant reflections. The aromas are reminiscent of the aromatic herbs of the Mediterranean maquis, ripe yellow-fleshed fruit such as pears and hints of wild chamomile; on the palate it is ample, enveloping and elegant with good persistence and savouriness on the finish that entice drinking. In pairing, it is excellent with shellfish and mollusc dishes and light fried foods; also perfect with fresh cow's milk cheeses. Accompany the table at gatherings of friends to enjoy a product with authentic and genuine flavours.
