The Trento Spumante Dosaggio Zero from the Abate Nero winery is a label of extraordinary expressive rigour, made with a base of Chardonnay and a small balance of Pinot Noir, which gives structure and personality to the cuvée. The absence of dosage, presupposes the use of the estate's best grapes, the most ripe and aromatically rich, which, without the need for added sugar, are able to express perfect harmony and aromatic complexity. It is the ideal label to pair with raw fish, sushi, sashimi and seafood.
Spumante Trento Dosaggio Zero comes from one of the region's most highly rated wineries, which has succeeded in attracting the attention of wine lovers with a range of excellent labels. It is the fruit of a careful selection of grapes from the most suitable plots, cultivated at an altitude of between 200 and 800 metres above sea level, in various parts of the region: from the Garda area, to the mountainous reliefs on the border with Alto Adige to the terraces of the Val di Cembra. After the harvest, the Chardonnay and Pinot Noir grapes are vinified separately with soft pressing and fermentation in temperature-controlled steel vats. After a few months of ageing, the base wines are blended and re-fermentation takes place in the bottle according to the Metodo Classico, with a minimum of 24 months' bottle ageing.
Abate Nero's Metodo Classico Trento Dosaggio Zero is the ideal sparkling wine for those who love absolute purity, the dry, taut and essential taste, without any concession to the softness of sugar dosage. To the eye, it has a brilliant straw yellow colour with luminous greenish reflections, crossed by a perlage of great finesse and persistence. The bouquet is fine and refined, with aromas of orange blossom, lemon peel, Granny Smith apple, peach, yellow melon, aromas of bread crust and delicate nuances of dried fruit. On the palate, it is straight and clear, with a vertical sip that flows into a savoury finish of great mineral freshness.
