Zenato's Ripassa is a Valpolicella produced with the technique of Ripasso on the marc of Amarone. It is made from Corvina, Rondinella and Oseleta grapes and is aged for 18 months in tonneaux. Valpolicella Superiore 'Ripassa' is the interpretation of this great red wine of the area, made by the famous Veronese Zenato winery. It is a young wine, born in the wake of the extraordinary international success of Amarone, which prompted the area's producers to invent a new label that could in part approach that type of taste experience. The practice of mashing the wine over the marc of Amarone gives it structure, softness and aromatic richness, resulting in a harmonious and persuasive sip, in line with the international face of the Valpolicella area.
"Ripassa" is Zenato's Valpolicella Superiore is the fruit of a winery that has been cultivating vines and producing wines in Valpolicella and the Lugana appellation area since 1960. Today, the property extends over almost one hundred hectares, divided into different estates, located in Sant'Ambrogio della Valpolicella, where red grape varieties are cultivated, and Sirmione and Peschiera del Garda, land of white grape varieties. The wines faithfully reflect the character of the terroir, with a classic and traditional profile At the base of the wine is a selection of excellent quality Corvina, Rondinella and Oseleta grapes from different plots of the estate vineyards. Fermentation takes place in temperature-controlled steel tanks, with maceration on the skins for a dozen days. The wine is matured in steel until January, when it is put back onto the Amarone marc for a second fermentation that lasts about a week. The wine then matures for 18 months in oak tonneaux and is refined for 6 months in the bottle.
Zenato's red Valpolicella Superiore "Ripassa" is dedicated to those who prefer softness, smooth and silky tannins, and a persuasive and suave character. Concentrated and full-bodied, but without the density of Amarone, it is perfect with roast and grilled meats or small game on the spit. To the eye it has a beautiful dark ruby red colour. The bouquet is very rich, with aromas of blackcurrant jam, wild blackberry, red-fleshed plum, hints of underbrush, soft oriental spices, tobacco and bitter cocoa. Ample and enveloping, it has a warm and fruity mouthfeel, reminiscent above all of ripe red-fleshed fruit. The finish is harmonious and persistent, closing on spicy and balsamic sensations.
