Venetian winemaker Valentina Cubi introduces Valpolicella Ripasso Superiore 'Arusnatico', a red wine with a balanced personality produced following a sustainable approach based on organic farming principles. All the names of the labels produced by the Valentina Cubi winery are dedicated to the Valpolicella territory and its history. In particular, the name 'Arusnatico' is a tribute to the Arusnati, an Italic population that inhabited Valpolicella in Roman and pre-Roman times.
Valpolicella Superiore Ripasso 'Arusnatico' is made from a blend of Corvina Veronese (65%), Rondinella (25%) and Molinara (10%), varieties that are organically grown on certified organic soils rich in skeleton. Harvesting is carried out by hand and after destemming, the grapes are placed in stainless steel vats for alcoholic fermentation at a controlled temperature. Once the first fermentation is complete, the mass is macerated for 10 days with the Amarone marc according to the Ripasso technique, undergoing a light second fermentation and enriching itself with aromas and structure. Subsequently, the wine ages for about 12 months in oak barrels and rests for a few more months in the bottle before final release.
The colour of Valpolicella Superiore Ripasso 'Arusnatico' by Valentina Cubi is a luminous ruby red. The nose, intense and elegant, evokes aromas of wild cherry and rose that blend with balsamic and sweet spice scents. In the mouth it is warm and fresh at the same time, with soft tannins and a persistent sapid-mineral finish. This is a red wine of excellent longevity that pairs perfectly with medium-aged cheeses and various red meat preparations.
