The Valpolicella Ripasso Superiore from the Santa Sofia winery is a soft, versatile and incredibly pleasant red wine produced in Marano di Valpolicella, Fumane and San Pietro in Cariano, in the province of Verona, Veneto. This label is obtained from a blend of Corvina, Corvinone, predominantly, and Rondinella grapes, from vineyards cultivated with the traditional guyot method on gentle hillsides, facing south-east, at an altitude between 150 and 260 metres. The soils, which enjoy excellent ventilation and drainage, are characterised by medium-textured limestone soils. The winery, surrounded by a Palladian villa of unquestionable beauty, is owned by the Begnoni family, which purchased it in the 1960s and today promotes various initiatives as the privileged custodian of this marvellous place.
Ripasso Superiore della Valpolicella is produced from carefully selected grapes harvested between the first and third decade of September. The grapes are brought to the cellar and undergo soft destemming and crushing before alcoholic fermentation in stainless steel containers at a controlled temperature of 26-28 °C, with maceration on the skins for about 10 days. Subsequently, the wine undergoes a second repassing on the skins, this time of the Amarone, for about 3 days, and then matures in large 50 hectolitre oak casks for 9 months before being bottled and put on the market.
The Valpolicella Ripasso Superiore di Santa Sofia has a bright ruby red colour. The nose reveals intense aromas of ripe fruit, including black cherry under spirits and dehydrated plum, floral notes of dried flowers, spicy hints of liquorice, cinnamon and cloves, finishing with a hint of undergrowth. In the mouth it is enveloping, concentrated and soft, characterised by a silky, velvety tannic texture and a pleasant freshness. This red from the Santa Sofia winery is a very pleasant wine, powerful but at the same time elegant and very drinkable.
