Cantina Mesa's Vermentino di Sardegna "Opale" was born as a declaration of love for the beautiful Sardinian land, whose production philosophy is oriented towards the simplicity of flavours and fragrances, the love of traditions and the simplicity of the fruits that nature gives every day. The name "Mesa" in Sardinian means table, a symbol of conviviality and sharing the good fruits of the earth. Gavino Sanna founded his business in 2004 with the aim of producing elegant and refined wines, which soon became famous both in Italy and abroad. The exterior architecture of the winery is particular, recalling the striking stylized designs shown on the wine labels.
The grapes of Cantina Mesa's Vermentino di Sardegna "Opale" grow in vineyards located in the Sulcis area, in the most southwestern part of the Sardinian island; the plants have an average age of about 30 years, and the soil is mainly composed of clay and limestone for wines with a structured and elegant character. The climate is Mediterranean, with a good influence of sea breezes that make temperatures in both summer and winter mild and temperate; important are the temperature ranges between day and night for the complete ripening of the grapes. Harvesting is by hand and takes place between the second and third decade of September; in the cellar, the destemmed grapes macerate for about 12 hours. Alcoholic fermentation takes place with selected yeasts, after which the must remain on the fine lees for 6 months. It is aged in the bottle for 2 months.
The colour of Cantina Mesa's Vermentino di Sardegna "Opale" is a deep straw yellow with bright golden hues. On the nose, there are hints of ripe yellow-fleshed fruit such as peach, aromatic herbs from the Mediterranean maquis and notes of iodine, vanilla and dried pastries. In the mouth, it enters sumptuous, full-bodied and balanced in union with freshness and savoriness at the end that draws drink after drink. In pairing, it is suitable with first courses with decisive and elaborate flavours, grilled or stewed fish and white meats; also interesting with medium-aged sheep's milk cheeses. A drinkable product suitable for the family Sunday table, sipping the authentic taste of the Sardinian land and savouring its tradition.
