Sardinian wine Capichera Vendemmia Tardiva tagged Capichera is a white wine in which Vermentino is processed with a special feature. In fact, the grapes are harvested late, when each bunch is full of sugars and olfactory components, giving greater complexity to the final product. The winery thus interprets the varietal with a guise that departs from the classicity with which this is usually presented to elevate it to a higher level of expressiveness. It is a label that also has a clear territorial style, in which there is a hint on the nose of the Mediterranean scrubland that characterizes the island landscape, transporting us sip by sip to the interior of Gallura.
This Capichera Vendemmia Tardiva Capichera comes from Vermentino grapes - one of the most popular regional varietals - used in purity. The vines grow in plots located near Arzachena, and the harvest is carried out late, selecting only the qualitatively perfect bunches. The must obtain by pressing the grapes ferments in steel tanks at a controlled temperature of 16-18 degrees for four weeks. The wine is then transferred to oak barrels for a total of four months, after which it is bottled and released.
Capichera Vendemmia Tardiva Capichera reveals itself to the eye with a straw yellow colour, slightly tending more toward golden in the rim. Interesting is the breadth of the aromatic range offered on the nose, in which floral notes alternate with touches of lavender and hints of Mediterranean scrub. Warm entrance to the palate, where a broad, rounded sip opens to a mineral and citrus taste. It closes with a long, caressing finish of good palatal persistence, capable of pairing perfectly at the end of a meal with desserts but also with a varied board of semi-mature goat cheeses.
