Fattoria Sammontana's Vin Santo del Chianti is a delicious Tuscan wine that is made from a blend of dried grapes from the Trebbiano Toscano, Malvasia del Chianti and San Colombano grape varieties. While the first two are among the most important white grape varieties in Tuscany, San Colombano is less well known. This grape variety, also known by the synonyms Verdea, Colombana Bianca, and Colombana di Peccioli, shows an excellent aptitude for drying in fruit lofts, which is why it has historically been used in the production of passito or raisin wines.
Fattoria di Sammontana Vin Santo del Chianti consists of a blend of Trebbiano Toscano, Malvasia del Chianti and San Colombano, bred according to the traditional Tuscan archetto system. The vines have an average age of 40 years and are rooted on skeleton-rich soil between 70 and 150 meters above sea level. Harvesting is done by hand with the aim of selecting only the healthiest and ripest grapes, which are placed to dry on racks in the farm's old Vinsantaia. Once the raisining process is complete, the grapes are gently pressed and the must is then introduced into small 100-liter oak or chestnut barrels, where fermentation and maturation of at least 4 years takes place.
Vin Santo del Chianti Fattoria Sammontana has a bright amber yellow color. Broad and intense aromas, defined by sweet sensations of dehydrated fruit, dried fig, date and walnut that meet hints of various spices. The soft envelopment and dense richness of the sip are well supported by the long, fresh epilogue reminiscent of the notes felt on the nose. The sweetness is dosed well, so much so that the producer himself defines this Vin Santo as semi-dry, according to the customs of the past.
