Marko Fon's Vitovska is a macerated white that tells the story of the Karst region. It macerates briefly on the skins and matures in old, dull wooden barrels. Spontaneous and rocky, it fully expresses aromas of ripe fruit such as peach, then yellow flowers and hints of exotic fruit. The Vitovska of Slovenian winegrower Marko Fon expresses themineral essence of the Karst unfiltered, with an uncommon tension and energy. Together with Malvasia Istriana, Vitovska is the most representative variety of the Karst, an area to which this grape is inextricably linked. Indeed, few grape varieties are able to withstand the harsh environmental conditions of the area, formed by rugged rocky terrain and traversed by the cold, violent Bora. In this habitat, Vitovska gives extraordinary results, managing to capture and transmit the identity of the Karst in the glass.
Marko Fon Vitovska is made solely from grapes of the white grape variety of the same name from vines of an average age of 40 years, rooted on red soil consisting of clay, limestone and rock, rich in mineral elements. Agronomic management excludes the use of fertilisers, pesticides and other synthetic chemical substances, while harvesting is carried out strictly by hand when the grapes have reached the correct stage of ripeness. In the cellar, alcoholic fermentation is entrusted solely to indigenous yeasts, accompanied by a brief skin maceration. Malolactic fermentation is carried out completely and for the subsequent ageing phase, old 640-litre oak barrels are used, containers in which the wine remains for approximately two years until bottling, which is carried out without any filtration.
Marko Fon's Vitovska is an intense straw yellow colour with golden hues. The complex aromas range from fruity notes of peach, pear and passion fruit to floral hints of camomile, all supported by a fervent mineral vein reminiscent of wet stone. The palate reveals marked freshness and intense savouriness, elements that give a clean, vertical cut to the progression, anticipating the very long mineral persistence.
