Pure Malt Whisky 'Sasayaki' is a distillate from the Dewa distillery in Yamagata Prefecture. It is matured in rare Mizunara oak casks, n wood that has to mature 100 years before it can be made into barrels. The name 'whisper' evokes its refined nature: on the nose, heady notes of date, chestnut honey, ripe banana and sweet spices entice the sip. On the palate, it offers silky smoothness that envelops in a warm embrace, culminating in a fresh, clean finish with a very long and elegant persistence
Whisky Pure Malt 'Sasayaki' by Dewa is a precious and elegant Japanese distillate produced within the Yamagata prefecture, specifically in the town of Ogumi. Mizunara oak casks, a variety of oak native to Japan, are used to age this fine whisky. Compared to American white oak, Mizunara wood is more porous and rich in water, which is why it requires at least three years of drying before it can be used to make the staves of the barrels. Not surprisingly, the name 'Mizu-nara' literally means 'water oak'. It is a rather rare tree, which can take up to two centuries before it can be used to make casks, which is why its wood is so precious. Whiskies aged in Mizunara casks acquire characteristic sensations of honey, sandalwood and sweet spices that give a graceful dimension to the distillate. In fact, the Japanese term 'sasayaki', the name of this whisky, means 'whisper', emphasising its fine and delicate character.
'Sasayaki' Pure Malt Dewa is made with pure malt carefully processed within the Yamagata Prefecture. After malting and fermentation, it is distilled in discontinuous stills. The distillate is then aged in oak barrels for at least 3 years, of which 12 months are spent in the precious Mizunara wood.
The Dewa Pure Malt Whisky 'Sasayaki' has a deep amber colour. On the nose are heady and complex notes of plum, chestnut honey, ripe banana, crème brulée and sweet spices. Sensations of dried fruit are proposed on the palate, emphasised by the soft alcoholic embrace, well supported by the fresh and clean finish, of very long and elegant persistence.
