Caol Ila is the Gaelic name for the "Sound of Islay", the strait that separates the island of Islay from Jura, one of the most remote and most beautiful of the west coast of Scotland. The barley used here is still malted locally at Port Ellen and pure spring water continues to gush from limestone in nearby Loch nam Ban before descending into a crystalline stream towards the sea at Caol Ila, as it always has. Then there are the descendants of generations past who keep alive the traditions of the place. Billy Stitchell is the director of the distillery and worked there for years, as well as his father, both his grandfathers and his great-grandfather. This unbroken line is proof that tradition and expertise are key here. Whisky Caol Ila 12 years is fresh, sweetly fruity and refined body. Light straw color, manages to maintain a delicate balance of flavors. On the nose, it reveals clean and appetizing with hints of citrus and a hint of smoke. The palate is compelling and harmonious, begins softly before unleashing a fragrant flavor and smoked. Remember smelling the oil bath and mouthwash; the scent is fresh and appetizing, with few traces of smoke. The palate is initially sweet but then there is a pleasant, light and fragrant smell of smoke followed by a final good persistence. Harmonious, gives a pleasant feeling in the mouth; drinking it with water you notice a slight acidity and flavor that ends with sweet notes. A complex balance of flavors. The finish is of good length, sweet, smoky, slightly pungent.
