Located in the small German town of Oestrich-Winkel, on the banks of the Rhine River, the Bibo Runge winery is distinguished by its modern and enterprising production approach, attentive to the changing needs of consumers. The winery, located in the Rheingau wine region, is led by Markus Bonsels together with his wife Monika Eichner, a husband and wife who, after decades spent working respectively in biotechnology and human resources at international companies, decided to follow their dream of producing wine. So, after leaving his job, Markus studied viticulture and oenology in Montpellier, Bordeaux and Geisenheim, gaining work experience with important French and German producers. In 2017, the couple finally started their own project with Bibo Runge, driven by the desire to produce wines with intense and clean aromas, made with respect for the health of the environment. The estate then specialised in the production of non-alcoholic wines, a category in which Markus can be considered an expert.
The varieties processed by the German winery Bibo Runge include Riesling and Pinot Noir, which are cultivated and vinified according to a sustainable production philosophy in both ecological and social terms, an approach that is evidenced by the Fair'n Green certification obtained in 2021. With this in mind, carbon dioxide emissions are kept to a minimum and no herbicides are used in the vineyard. Harvesting is done by hand, while in the cellar the winemaking process is based on gentle pressing and spontaneous fermentation. Mostly wooden barrels of varying capacity are used as wine containers, which contribute to the complexity of the wines. For the non-alcoholic wine line, the technique of dealcolation is then adopted, aimed at removing the alcohol from the wine without altering its organoleptic characteristics.
The production of the family-run Bibo Runge estate includes still, dry, semi-dry and sweet wines as well as delicious sparkling wines, all with a style of balance and cleanliness. The 'Deserteur' line is also dedicated to still and sparkling wines without alcohol, which meet consumers' demands for wholesomeness.
