The small winemaking champenoise Fabrice Moreau is located in Marfaux, in the heart of the Montagne de Reims Natural Park, an area where it makes delicious Champagnes that are the result of a premissive artisanal care. The historical roots of this Récoltant Manipulant go back to the first half of the 1900s, a period when Maurice Mimin took over the vineyards of his father Nicolas. In addition, in 1937 Maurice, a very politically committed man, co-founded the Marfaux cooperative winery. The winemaking legacy later came into the hands of Fabrice Moreau, who began his business as a vineyard helper for the Mimin family until he purchased his first plot in 1971, at the age of 16. In the following years, together with his wife Isabelle, Fabrice gradually reconstituted the Maurice estate by buying or renting several plots. The reconstitution work ended in 1984, and from 1982 to 1991 Fabrice was also president of the Marfaux cooperative winery. Since 2018, young Adrien Moreau, Fabrice's son, has taken the reins of the Domaine, supported by his mother Isabelle.

The 3.5 hectares cultivated by the Fabrice Moreau estate are spread over 23 plots, almost entirely located in the commune of Marfaux, each with its own specific name. The varieties cultivated are the three main varieties of the Champagne wine region, namely Pinot Noir, Pinot Meunier and Chardonnay, planted on clay-limestone soils with full southern exposure. The agronomic management embraced is highly sustainable and harvests are done by hand so as to preserve the integrity of the clusters. In the winery, vinification is mostly carried out in temperature-controlled stainless steel tanks, and before refermentation in the bottle according to the Champenoise Method, the wines mature for several months on fine lees.

What is striking about the Champagnes of the RM Fabrice Moreau is their fragrant expressiveness, without neglecting the tense fresh-sappy verve characteristic of the region.
