Kolfok represents an Austrian winery characterized by a sincerely artisanal approach to production. We are in Neckenmarkt, on the border with Hungary, within the Burgenland wine region, where in 2013 the young Stefan Wellanschitz, whose family already owns the winemaking entity Weingut Wellanschitz, decided to establish his own winery in his own image. The production philosophy followed by Stefan is well expressed in his own words, "My wines are not made and made, rather I would like to act as a modest observer, thus giving the wines themselves all the freedom they need." "Kolfok" is a word originating in Burgenland and describes an unconventional, out-of-the-box spirit, an appropriate expression to indicate Stefan's vision.

The Kolfok winery consists of a mix of old and new vines, cultivated in accordance with the dictates of biodynamic agriculture. The rows reach up to 500 meters above sea level and rest on very heterogeneous soils that in the higher plots are rich in gneiss, schist and limestone, while in the lower plots in iron and volcanic clay. The ampelographic platform includes the native grape varieties Gruner Veltliner, Blaufrankisch, Blauburger and Zweigelt, the latter two genetic hybrids created in the 1920s by Dr. Fritz Zweigelt, as well as the international varieties Chardonnay and Syrah. The winemaking process adopted by Stefan limits the use of technology, with a view to low interventionism aimed at indulging the unique varietal and territorial expression. Aging takes place mostly in large Austrian oak barrels, for both whites and reds, and the masses are bottled without filtration.

Stefan Wellanschitz's intention is to reflect Neckenmarkt's dedicated terroir with his wines. The proposed selection embraces different types, such as whites, orange wines, rosés and red wines, all of which have a vibrant fresh-flavored streak and are characterized by an authentic and precise style.
