Salwey is a winery located in Kaiserstuhl, a southwestern region of Germany that is home to an ancient extinct volcanic system, responsible for defining a unique terroir and famous for being the sunniest point in the country. The family's winemaking roots date back to the 18th century, and today this winery has reached its third generation, combining the experiences and knowledge of tradition to produce wines of great character.
At Salwey, work in the vineyard and in the cellar is characterized by a production philosophy focused on sustainable practices. All vineyards are cultivated in full respect of the climate, animals, and plants; hence, the family motto is "As little as possible, as much as necessary," meaning operating as naturally as possible with minimal intervention, only when strictly necessary. Harvesting is entirely done by hand, with great care in transporting the grapes to the cellar and a rigorous selection before the start of the winemaking process. Production focuses on dry white and red wines, characterized by a clear and linear style that reflects the diversity of the grape varieties and the minerality of each terroir.
Salwey owns approximately 4.5 hectares of vineyards in Kirchberg, a district located on a plateau characterized by hard and poor volcanic soils, which give the wines a pleasant acidity and robust tannins. Work in the cellar takes place in the heart of this territory, in a tunnel carved into the mountain, ensuring an ideal aging environment for the wines, with constant temperatures and controlled humidity. The winery produces wines that fully reflect the character of the terroir, with a range that spans from fresh Pinot Noir Rosés to fragrant sparkling wines.
