The Zibibbo 'Isola del Vento' by Abbazia San Giorgio is an intriguing wine from Pantelleria, made from aromatic white grapes macerated very long and aged in amphora. The winery is strongly linked to the artisanal movement and is a firm believer in spontaneous fermentation, and this wine is no exception. Long maceration and aging allow the development of evolved aromas such as dried yellow fruit, almonds but also salty flavors.
