Vincent Wengier's Aligoté is a fresh white wine made from a lesser-known white grape variety, cultivated on limestone-rich soils near Chablis, where the winery is located. The company is converting to organic farming and works in the vineyard to reduce the impact of viticulture in order to preserve the precious soil. On the nose, fragrant hints of citrus peel immediately impact, together with iodine hints that find a savoury appeal on the sip. Very taut on the palate, it is suitable as an aperitif but may surprise with Asian cuisine, such as lightly spiced Chinese dishes
