Cavalchina's Bardolino is a red wine that perfectly expresses the character of wines from the Veronese shore of Lake Garda. It is a wine with a typically territorial face, made from the native red grapes that have been grown in the area for centuries: Corvina, Rondinella and Molinara. The characteristics of the vines and terroir are enhanced by a delicate vinification in steel, which allows the freshness and fragrance while preserving the pleasantly fruity varietal aromas to come to the fore. A clear, streamlined red that manages to combine tradition and modern taste for wines that enhance expressive immediacy.
Bardolino red wine comes from one of the most interesting wineries in the Custoza and Garda area. For more than a century, the Piona family has run the Cavalchina estate, producing excellent wines that are still among the finest in the Garda area. The Corvina, Rondinella, and Molinara vines are cultivated in the hilly Veronese area on soils consisting mainly of ancient deposits of glacial origin from the morainal amphitheatre of Lake Garda. The particularly mild climate, with Mediterranean overtones, favours excellent ripening of the red grapes. Harvesting takes place at a slightly overripe stage so as to have more sugary clusters with more intense aromas. Fermentation takes place in temperature-controlled stainless steel vats, with maceration on the skins lasting a dozen days. Before bottling, the wine rests for a few months in steel tanks on fine lees.
Bardolino wine from the Cavalchina winery is a young red that is appreciated for its extraordinary pleasantness and pliability in pairings. It goes very well with pasta dishes with tasty sauces, baked pasta, white meat main courses, poultry, roast turkey or veal. In the glass, it has a soft, bright, ruby red colour. The nose is exuberant and lively, with fragrant aromas of morello cherry, wild strawberries, currants, cherries, light floral and delicately spiced nuances. The palate is medium-bodied, with a fine tannic texture well integrated with juicy, crisp fruit, expressing all the youthful vitality of a flowing, easy-drinking red. The finish is savoury with lively freshness. An elegant and authentic version of the great tradition of Bardolino reds.
