Tenuta Ulisse's Cerasuolo d'Abruzzo 'Ulisse' is an intense and versatile rosé. Cerasuolo is certainly one of the identity wines of Abruzzo and this 'Ulisse' is a typical expression with personality. After a short cold maceration, the Montepulciano grapes ferment in steel only, a technique that develops great freshness and aromaticity. Cerasuolo d'Abruzzo 'Ulisse' is a rosé wine of excellent balance and pleasant fragrance produced in the province of Chieti by the family-run Tenuta Ulisse. Until 2010, the name Cerasuolo d'Abruzzo represented a type of the DOC Montepulciano d'Abruzzo, but was later declared a separate designation and became the first Italian DOC entirely reserved for a rosé wine. The symbolic variety of Cerasuolo d'Abruzzo is, needless to say, Montepulciano, a grape endowed with surprising oenological versatility.
The production of Tenuta Ulisse's rosé wine 'Ulisse' Cerasuolo d'Abruzzo begins with the sorting of only the Montepulciano grapes and their subsequent introduction into the cooling tunnel, where the temperature of the bunches is suddenly lowered. This is followed by the cryomaceration process, aimed at enhancing the aromatic component of the grapes. The grapes are then destemmed and undergo a 12-hour cold maceration, after which they are pressed in an inert environment. The subsequent slow alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of 11 °C and, again in stainless steel, the wine matures for several months until final bottling.
Tenuta Ulisse's Cerasuolo d'Abruzzo 'Ulisse' has a brilliant cherry pink hue. The nose perceives fragrant hints of red fruits such as cherries and strawberries, combined with floral hints of violets. The taste is clear and fresh, with good body and savoury persistence, and the finish recalls the fruity and floral notes of the nose. This Cerasuolo stands out for its remarkable versatility in food and wine pairings, being able to accompany both land and seafood dishes of a certain structure.
