Collio Bianco 'Ca' Savorgnan' by young Friulian producer Mitja Sirk represents arich and structured interpretation of the Friulano grape, an indigenous white grape variety of the Collio area. The name 'Ca' Savorgnan' derives from the locality of the same name from which the grapes destined for this label come, cultivated and worked with love by Mitja Sirk together with his partner Marta Venica, eldest daughter of Giorgio, owner of the renowned Venica & Venica winery. This is a very old vineyard, managed by Mitja and Marta without the use of synthetic chemicals.

Ca' Savorgnan' Mitja Sirk Collio Bianco is a 100% Friulano whose grapes come from a single vineyard over 80 years old rooted on the typical Friulian 'ponca', a type of soil consisting of alternating layers of marl and sandstone. Agronomic management excludes the use of herbicides, pesticides and other synthetic chemical products, while the harvest is carried out entirely by hand. In the cellar, the bunches undergo soft pressing, followed by spontaneous alcoholic fermentation of the must in used tonneaux, the same type of wine containers where the liquid matures for 8 months on the fine lees before final bottling. The wine is finally marketed not before a further 12 months in bottle.

Mitja Sirk's Collio Bianco 'Ca' Savorgnan' has an intense and luminous straw yellow hue. The aromatic bouquet is defined by fascinating scents of yellow peach, jasmine and citrus fruits, surrounded by delicate hints of tomato leaf and almond. The progression on the palate is dry, warm and clear-cut, with good body and structure, and a persistent and distinctly savoury epilogue with excellent taste-olfactory correspondence.
