The initial process takes place in an ancient "Calcatórium," a granite tank where the clusters are foot-trodden for three hours before ending up in a vertical press. The juice obtained from this process ferments for seven days, followed by another eight months of aging in cement vats. The spontaneous fermentation and aging impart a unique structure and complexity to the wine.
