The Etna Bianco Baglio di Pianetto 'Fermata 125' presents itself as a fresh and saline interpretation of Carricante, the most prized white grape variety of Mount Etna. The 'Fermata 125' project originates on the north side of the volcano from the collaboration between the Palermo-based Baglio di Pianetto winery and the Etna estate Cantine Valenti, the latter located in the municipality of Passopisciaro. On the label is depicted the first train that inaugurated the historic Circumetnea railway, known as the "littorina," to which the 'Fermata 125' selection pays tribute. Not by chance, stop 125 is located right in front of Cantine Valenti and represents one of the four stops located in the municipality of Passopisciaro.
Baglio di Pianetto Etna Bianco 'Fermata 125' is a 100% Carricante cultivated according to the principles of certified organic agriculture on sandy volcanic soils located at an altitude between 750 and 800 meters above sea level. In the cellar, the clusters are white vinified through soft pressing and alcoholic fermentation in stainless steel tanks at controlled temperature. This is followed by a maturation period of 6 months always in steel and then a further short rest in the bottle before being released on the market.
Visually, the 'Fermata 125' Etna Bianco from Baglio di Pianetto shows a bright straw yellow hue tending towards golden. Seductive aromas of apple, orange blossoms, lemon, acacia flowers, grapefruit, and anise describe the fragrant aromatic profile. On the palate, freshness and saltiness stand out above all, accompanied by a persistent balsamic and mineral finish. It is a fine and balanced Carricante, an excellent pairing with seafood cuisine, particularly with typical Sicilian dishes such as stuffed sardines, stuffed squid, and anchovy meatballs.
