The Grillo della Timpa is a flavorful, well-structured Sicilian white wine, vinified in traditional cement containers with partial maceration on the skins. It is fresh, soft and mineral, with notes of green apple, orange blossom and lime in evidence
Feudo Montoni's Grillo "Della Timpa" was born in Sicily, specifically in Cammarata in the province of Agrigento. Feudo Montoni is a historical estate dating back to the second half of the 1400s when the Aragonese Abatellis family decided to build a quadrangular courtyard dwelling; in 1595, Andrea Bacci mentions in his "De Naturali Vinorum Historia" this estate and the wine produced on it. At the end of the 1800s, the Serci family linked its name to that of the Feud: Rosario Serci bought the estate and began cultivating the adjacent lands, respecting the biodiversity and ecosystem of the place. From generation to generation, this method of work has been passed down, reaching Fabio, who today successfully manages the family business, always looking to the future.
Feudo Montoni's Grillo "Della Timpa" vineyards are located about 700 meters above sea level. "Timpa" is the name of the cru from which the grapes come and, in Sicilian dialect, refers to the wide slope on which the vineyards grow. The soil is mainly sandy for an elegant but firm final product; the farming chosen is organic with minimal human intervention and no use of harmful herbicides and pesticides. Harvesting is done manually, and the bunches are arranged in large crates before arriving at the winery; fermentation takes place in cement containers in contact with the skins. It stays on the lees 6 months with systematic batonnage.
To the eye, Feudo Montoni's Grillo "Della Timpa" is straw yellow with greenish highlights. The bouquet of aromas recalls notes of white peach, medlar and floral notes of broom, jasmine and almond blossom; in the mouth, it is elegant and persistent, with good freshness on the finish that balances the overall structure. In pairing, it is ideal with steamed fish, shellfish and crustaceans in condiments; also interesting with fresh cow's milk cheeses and stewed white meats. Perfect for relaxing and romantic aperitifs by the sea in summer to enjoy a product from the Italian tradition, characterized by genuine and authentic flavours.
