JIASIK ROSSO BORGO SAN DANIELE 2021 DESCRIPTION

The 'Jiasik' Rosso di Borgo San Daniele was born in the province of Gorizia. The siblings Alessandra and Mauro inherited the small winery from their grandfather in 1990. The project is to perpetuate the family tradition, making it futuristic and sustainable. Alessandra is in charge of communication, telling the stories behind her wines in a captivating way, passionate stories that accompany the delicious drinks; Mauro, on the other hand, is dedicated to the winemaking and vineyard work, putting his studies in oenology to good use, implemented by his experience in the field and the foresight he puts into the cellar every day.

The Cabernet Sauvignon grapes of Borgo San Daniele's 'Jiasik' Rosso result from careful work that respects the environment surrounding the vines: love for the host territory, calibrated production, and considered decisions. Human intervention in the vineyard is reduced to a minimum, with an absolute ban on synthetic products: only copper, sulphur, and natural infusions of dandelion and nettle that make the soil thriving and fertile are permitted. Manual harvesting is called 'dedicated': a programme is followed to pick the different grapes at the moment of perfect ripeness of each. In the cellar, the bunches are destemmed; alcoholic fermentation follows for 9-10 days with daily punching-down repeated three times. It rests in steel.

The colour 'Jiasik' Rosso di Borgo San Daniele is a ruby red with intense reflections. The bouquet is broad and elegant: the aromas are reminiscent of ripe red fruit. In the mouth, it is aromatic and full with good softness due to the full ripeness of the grapes. It is recommended with grilled red meat cuts, roasts and mature cheeses. An excellent wine that accompanies barbecues in the company of lifelong friends during the summer and at the table at family celebrations to sip together a wine that is an ambassador of the land of Friuli.
