This variety, part of the vast Lambrusco family, owes its name 'Salamino' to the compact shape of its bunches, reminiscent of salami. This grape is characterised by its late ripening, with the harvest often taking place in mid-October, as well as its remarkable resistance to disease and high yields, qualities that have always made this variety attractive to winegrowers. In addition, the berries are rich in colour and extract, elements that contribute to the structure of the wine.
The Rosé Frizzante Lambrusco Ancestrale Vitivinicola Fangareggi 'Selvadeg' is a 100% Lambrusco Salamino from vines grown with respect for the environment, without the use of synthetic chemicals. Once the grapes have reached the right stage of ripeness, they are hand-picked with careful selection. This is followed by vinification with spontaneous alcoholic fermentation and then lightly frothing according to the Ancestral Method, bottling the must-wine while still in fermentation. Refinement on the lees in the bottle lasts for several months, at the end of which the wine is finally ready to be put on the market.
