Tropfltalhof's "LeViogn" is a white wine of great aromatic depth, produced by a biodynamic winery that cultivates picturesque vineyards overlooking Lake Caldaro. Tröpfltalhof's White "LeViogn" is the result of constant and painstaking work that embraces the biodynamic philosophy, following the idea that grapes are living raw materials to be respected and carefully transformed so that the final product can be the perfect synthesis of the intrinsic values of the fundamental characteristics of the terroir. Andreas Dichristin is the wine artist who tries to bring all these factors together, thanks to great deference to nature and its inviolable stages of transformation: understanding the laws and processes of nature is the only way to get in touch with it. Its activity is a closed and circular production chain since the ecosystem is also optimal due to the presence of animal farms and grain cultivation.
Tröpfltalhof's "LeViogn" wine vineyards grow about 300 meters above sea level. The plants have an average age of about 20 years, and their position is ideal for the sun to be constant in summer and winter, ensuring perfect ripeness at harvest time. The microclimate is favourable due to the presence of the lake with mild, sunny summers and cold, snowy winters, but with constant temperatures. The soil is mainly composed of limestone gravel in union with clay and sand, and biodynamic compost that makes the soil thriving and ideal for plant growth. Harvesting is done manually between late September and early October when the grapes have reached a beautiful intense colour; in the cellar, fermentation takes place in wood spontaneously, thanks to indigenous yeasts. Finally, the wine is bottled without filtering.
"LeViogn" from Tröpfltalhof appears in the glass straw yellow with intense highlights. The aromas are intense and reminiscent of iodine and brackish notes mixed with summer yellow flower notes of ripe yellow-fleshed fruit and balsamic mountain herbs. In the mouth, it is full, engaging and elegant, with intense freshness and savoriness on the finish for a curious drink. In pairing, it is excellent with shellfish and shellfish appetizers and rich fish soups; also particular with mixed cured meats and aged cow's and sheep's milk cheeses. Perfect for the Christmas Eve table with an appropriate menu for a holiday and to honour family celebrations while sipping wine with authentic and genuine flavours. The smoothness holds up the marine shoulder of the Oysters, and the wine's savoury finish meets the brackish side of the shellfish.
