The Merlot 'Philo' from the Venit winery is an organically grown Friulian label characterised by a juicy, fruity drink. The beautiful label depicts the flower of the Veccia Sativa, a plant that symbolises an alternative to the use of chemical fertilisers, harking back to ancient practices. In fact, this herb, which grows wild in uncultivated land and was once often present in the inter-rows of vineyards, is an excellent green manure plant thanks to its good nitrogen-fixing capacity and rapid growth, a factor that enables it to prevent the growth of unwanted weeds.
Merlot Venit 'Philo' is produced from pure Merlot grapes cultivated in accordance with the principles of certified organic farming on clay soils rich in the so-called 'Caranto', a type of compact clay. Following manual harvesting, the grapes are vinified in red by alcoholic fermentation in contact with the skins in stainless steel tanks. This is followed by a 4-month maturation phase, also in stainless steel, spent on the fine lees with frequent bâtonnage, and then a further 4 months' rest in the bottle before final release.
On visual inspection, the 'Philo' Merlot from the Venit estate shows a dark ruby red colour with violet hues. The aromatic profile is defined by hints of currant, plum, raspberry and violet that blend with vinous nuances and slight hints of undergrowth on the finish. The progression on the palate is direct and immediate, very fresh and juicy, with soft tannins and an intense fruity fragrance on the finish. By virtue of its freshness and accessibility, this Merlot goes splendidly with hors d'oeuvres and first courses, such as cheese and charcuterie boards and pasta with tasty meat sauces.
