Mezcal 'Michoacan' Derrumbes

The Mezcal "Michoacan" from Derrumbes is a spirit produced by the distillation of two different varieties of agave, the Cupreata, which gives fruity aromas, and the Cenizo, which gives herbaceous notes. The Derrumbes distillery produces mezcals by selecting some of the best terroirs in Mexico. In Michoacan it is distilled using the so-called philipino method, which uses a particular wooden still, which is buried underground. This gives a peculiar and unique character to the spirit: clear vegetal hints of freshly cut grass, then hints of sugar, smoke and pleasant acetic hints on the finish. In the mouth is intense, sweet and pleasantly mineral, with slight sensations of spiciness at the bottom of the palate

"Michoacan' is a Mezcal made by a distillery of excellent quality. Derrumbes Mezcal has decided to give voice to the individual regions of Mexico, offering a range of labels that succeed in expressing the oldest traditions in the sign of elegance and finesse. Mezcal comes from the processing of agave of the indigenous Cupreata and Alto de Michoacán varieties, which have always been present in these lands. After cutting the plants, the heart of the agave is cooked in traditional brick ovens and then undergoes fermentation. Distillation takes place in typical Michoacán stills, made of wood and copper and fed by direct flame, under the watchful eye of master distiller Guadalupe Perez from the village of Tzitzio. The distillate matures for about two months in the bottle before being released for sale.

Derrumbes Mezcal 'Michoacan' represents the most typical character of its territory of origin. At first glance, it is absolutely transparent and crystalline. The olfactory profile is refined and fragrant, with vegetal notes of freshly cut agave, aromatic herbs, white-fleshed fruit, hints of tropical fruit, caramel softness and smoky and slightly spicy nuances. The palate is delicate, with fruity aromas of great finesse, clear and harmonious. The finish is persistent, long, with a fresh, mineral finish.
