PECORINO 'ULISSE' TENUTA ULISSE 2024 DESCRIPTION

The Pecorino 'Ulisse' from the family-run Tenuta Ulisse winery is a bottle with a citrus and mineral character, distinctive traits of the variety. This white grape variety, indigenous to the Adriatic side of the central Apennines, particularly the regions of Marche and Abruzzo, has been cultivated since ancient times. However, during the 20th century, wine growers' interest in Pecorino grapes waned, so much so that it came close to extinction. It was only rediscovered in the 1980s in some old vineyards that had escaped phylloxera, with its spread becoming exponential from then on.

Tenuta Ulisse Pecorino 'Ulisse' is made from pure Pecorino grapes grown in the province of Chieti. Following the harvest, the grapes are carefully selected and then subjected to a sudden drop in temperature thanks to the cooling tunnel. This is followed by cryomaceration, aimed at enhancing the aromatic component of the grapes, and then destemming and pressing in an inert environment. Once the must is clarified, it undergoes a slow alcoholic fermentation in stainless steel tanks at a controlled temperature of 11 °C. The wine then matures in stainless steel tanks for a few months before final bottling.

Tenuta Ulisse's Pecorino 'Ulisse' has a straw yellow colour with greenish hues. The nose perceives hints of peach, grapefruit and exotic fruits such as papaya, supported by iodized mineral hints that emerge at the close. The taste, rather fresh and savoury, reveals a distinct mineral timbre that accompanies the good aromatic persistence on the finish. The ideal accompaniment to this Pecorino Abruzzese is seafood cuisine, especially that typical of the region, such as fish soup.
