The Pernand Vergelesses Blanc Domaine Pavelot 2020 is a wine masterpiece that captures the essence of the Belles Filles and La Morand hills, enhanced by Les Quartiers and Sur Herbeux. Vinified 75% in small oak barrels and the remainder in stainless steel, this white wine has a green-gold colour, irresistible floral aromas and an enveloping palate of fresh fruit with a lively, balanced acidity. To be matured for a few years to fully appreciate its freshness and minerality.
The Pernand Vergelesses Blanc from Domaine Pavelot embodies a long family tradition rooted in the 17th century in Pernand-Vergelesses, France. Currently, the management of the 9.5-hectare estate is entrusted to Lise and Luc Pavelot, brother and sister, following in the footsteps of their father Régis and grandfather Maurice. The organic certification since 2009 and manual vineyard work reflect a constant commitment to the health of the soil, vines, and wines, in respect of the surrounding environment and the people who inhabit it.
Domaine Pavelot's philosophy in creating wines like Vergelesses Blanc is expressed through sustainable, organic, and traditional practices. The land is worked with a plow, as it was once, and only organic compost is used to fertilize the soils. This wine is the result of a blend of grapes from different areas around the Domaine, including Les Belles Filles, Les Quartiers, La Morand, and Sur Herbeux. Vinification takes place in concrete tanks using indigenous yeasts for about 17 days, and after this phase, the wine undergoes aging in barrels, of which 10% are new, for a period of 12 months. Subsequently, it continues its evolutionary path for an additional 8 months in stainless steel tanks. This combination of wood and steel gives the Pernand Vergelesses Blanc a truly elevated structural complexity.
The soils, characterized by a structure of clay-limestone and marl, impart a mineral freshness with citrus notes to the Pernand Vergelesses Blanc from Domaine Pavelot, making it accessible even in its youth. This wine presents itself in the glass with a green-gold color and a floral bouquet. The palate reveals a rich intensity of fruit and lively acidity without excess. The specific stages of vinification in steel and barrique, the extended aging, and the absence of filtration emphasize the complexity and elegance of this wine.
