Prosecco di Valdobbiadene 'Spago Luxury Collection' from the Veneto sparkling wine producer Mionetto is a sparkling wine made from Glera grapes to be appreciated for its refined and suave personality. This bottle recalls the ancient tradition of Prosecco packaged with string, a practice that local winemakers adopted by tying the cork with string so that the pressure exerted by the carbon dioxide contained in the bottle would not lead to uncorking. The Mionetto winery took up this technique back in 1961 and the tying operation is still carried out by hand by specialised workers.
Mionetto 'Spago Luxury Collection' Valdobbiadene Prosecco is made from pure Glera grapes grown in the hilly area of Valdobbiadene, one of the most suitable for the production of Italy's most popular sparkling wine. Following the harvest, the grapes are transferred to the winery, where they are vinified using the white wine method with soft pressing and alcoholic fermentation in stainless steel tanks. Subsequent frothing takes place in autoclaves according to the Martinotti Method, otherwise known as the Charmat Method, until a pressure of approximately 2.5 atmospheres is reached, thus in the range of sparkling wines rather than sparkling wines. The wine is finally bottled under isobaric conditions with a residual sugar of 10-14 g/l.
