PROSECCO DI VALDOBBIADENE SUPERIORE EXTRA BRUT 'AUDAX ZERO.3' BORTOLOMIOL 2022 DESCRIPTION

Bortolomiol's Valdobbiadene Extra Brut 'Audax Zero.3' is a delicate and refined Prosecco with a very low dosage, making it pleasantly dry and fresh. The bouquet expresses floral scents, citrus and white fruit aromas. The sip is savoury and lively fresh, with fruity aromas of great expressive finesse. It is a perfect Prosecco to enjoy as an aperitif, with hors d'oeuvres or seafood fritters.

Bortolomiol's 'Audax Zero.3' Spumante is made from pure Glera grapes grown on the steep hillsides of Valdobbiadene, in the heart of the historic Prosecco production area. The vocated soils of a predominantly calcareous-clay matrix and the cool climate, already influenced by the foothills of the Pre-Alps, constitute a perfect habitat for the native Glera vine, which expresses grapes with a rich and aromatic profile. The grapes are harvested manually from mid to late September and are vinified by soft pressing, to extract only the free-run juice. Fermentation then takes place in steel tanks. After a short ageing period in steel, the base wines are racked into autoclaves for prise de mousse and fermentation according to the Martinotti or Charmat Method, with a total duration of about 2 months. Once bottled, the Prosecco matures for a couple of months in the cellar before being put on sale.

Prosecco di Valdobbiadene Superiore Extra Brut 'Audax Zero.3' is a label that completes the range of Bortolomiol sparkling wines by recalling the winery's tradition and history. As early as the 1960s, in fact, Bortolomiol produced a Prosecco Brut, when the custom of the time was to offer only the classic Extra-Dry dosage. This sparkling wine restores the pure and authentic flavour of the Glera grape with all its richness of aromas and fragrances. The colour is straw yellow with light greenish reflections. The perlage is fine and continuous with creamy mousse. The nose is delicate and subtle, with aromas of orange blossom, white flowers, citrus and white fruit. On the palate it expresses a vivid freshness, with crisp, fragrant fruit that stretches towards a savoury finish.
