Riesling's "Praepositus" from Novacella Abbey is produced in the province of Bolzano, in an ancient Abbey whose foundation dates back to 1142, thanks to Bishop Hartmann. In a short time, it became an important spiritual and cultural centre, a place of liturgies and solemn celebrations in medieval times. From 1177 Pope Alexander III recognized the surrounding land holdings to the monastery, and from that time, the first cultivation of vines began, with an extension of about 900 hectares; with the secularization of the 19th century, part of these lands ceased to belong to the abbey, but from that time and still today the farmers of the area make donations of their grapes so that wines of excellent quality can be produced in the monastery cellars.
Riesling "Praepositus" grapes from Novacella Abbey come from the Conca di Bressanone (Brixen Basin) and grow at altitudes between 650 and 750 meters above sea level. The soil has moraine deposits composed of mycascist, paragneiss and quartzite for a final product with a strong character; the climate is characterized by cold winters with heavy snowfall and mild summers before which spring frosts often occur. The exposure is south/southwest, excellent for the sun's rays to hit the rows steadily and give full ripeness to the grapes at harvest time. The latter is done manually around mid-September; once in the cellar, the alcoholic fermentation process starts in steel, where ageing also occurs for about 12 months. It rests in a bottle for about 6 months before marketing.
In the goblet, Riesling's "Praepositus "from 'Abbazia di Novacella is golden yellow with bright highlights. The bouquet of aromas is varied and powerful: intense aromas of orange, peach and dehydrated apricot in union with candied pineapple and wildflower honey. In the mouth, the texture is pleasant and enveloping, with a pleasing elegance and final persistence to recall goblet after goblet of drinking. Perfect pairing with pasta dishes dressed with meat sauces, sweet and sour cuts of white meat; also interesting with fish dishes cooked Mediterranean style.
