RED 'PASSIONESENTIMENTO' PASQUA 2022 DESCRIPTION

The Pasqua family's Rosso 'Passionesentimento' is a soft-tasting, enveloping Veneto label produced through a prolonged grape drying process. This bottle has inaugurated the 'Passione e Sentimento' project, terms that express the love that the Pasqua family has always invested in their business, particularly enhancing the link with the city of Verona and its consolidated oenological tradition. Moreover, the union of these two words and the play on words with the term 'appassimento' gave rise to the name 'Passimento', the label's appellation.

The 'Passionesentimento' Pasqua Rosso consists of a blend of Merlot (40%), Corvina (30%) and Croatina (30%) grapes grown in the eastern area of Valpolicella. Harvesting is carried out by hand in mid-September and the bunches are then transferred to the drying loft for the drying period on special wooden crates, at controlled humidity and temperature levels with continuous air recirculation to prevent the development of mould and rot. The berries lose up to 30% of their weight due to water evaporation, thus concentrating sugars and aromas. Each variety is then vinified separately through alcoholic fermentation in contact with the skins in steel fermenters. This is followed by blending of the masses and then ageing for 6 months in oak tonneaux.

The 'Passionesentimento' Rosso di Pasqua is an intense ruby red colour. The nose perceives complex and decisive hints of ripe red fruits and sweet spices, surrounded by balsamic nuances. The entry on the palate is soft and enveloping, well balanced by a pleasant freshness, with a velvety tannic texture and a very slight residual sugar that contribute to the overall sensation of roundness.
