SAUVIGNON COLLIO FORMENTINI 2022 DESCRIPTION

The Collio Sauvignon from the ancient Formentini winery represents a sleek and mineral interpretation of Sauvignon Blanc, a white grape variety widely cultivated in the territory of Collio Goriziano. In particular, the grapes destined for this label come from the areas of San Floriano and Zegla, two neighboring areas characterized by different environmental parameters that determine the production of wines with very different characteristics. Specifically, the vineyards of San Floriano are characterized by sunnier exposures, a factor that results in wines with greater structure, different from the finesse and pronounced aromatic intensity of the wines from Zegla. From the synthesis of these two areas, Formentini has identified the perfect balance, as evidenced by this Sauvignon Blanc.

Formentini Sauvignon Collio comes from pure Sauvignon Blanc grapes grown on soils characterized by the so-called "ponca", a type of soil consisting of alternating layers of marl and sandstone. In the cellar, the clusters are vinified through partial cryomaceration and subsequent gentle pressing, all in the absence of oxygen to avoid unwanted oxidative phenomena. Alcoholic fermentation takes place in stainless steel tanks, the same wine containers where the mass also rests for the subsequent maturation phase of at least 8 months on the fine lees, with the exception of a brief passage in large wooden barrels.

Visually, the Collio Formentini Sauvignon reveals a bright straw yellow color with greenish reflections. The aromatic spectrum consists of typically varietal aromas of lychee, sage, and bell pepper, complemented by hints of orange and flint. The taste is clean and complex, very fresh and mineral, with a persistent citrusy finish.
