Persegà' is a Valpolicella Classico Superiore that comes from the vineyard of the same name in the heart of Marano, where the typical vines of the area grow on volcanic soil. Corvina, Corvinone and Rondinella ripen without appassimento in pursuit of an 'old-fashioned' profile for the area. The nose has intense hints of red and black fruit, as well as subtle hints of aromatic herbs. Fresh and dry on the palate, it surprises with its tanginess and sharpness on the sip. Valpolicella Classico Superiore 'Persegà' from the Veneto-based Antolini is a fine interpretation of the Valpolicella Classico zone, endowed with a balanced, fruity character. This label takes its name from the Persegà vineyard, a 1.2-hectare plot in the municipality of Marano di Valpolicella. The grapes harvested within the parcel are entirely destined for this Valpolicella Classico Superiore, without any selection for Amarone, so as to 'capture' every nuance of the vineyard.
Antolini Valpolicella Classico Superiore 'Persegà' comes from a blend of Corvina, Corvinone and Rondinella grapes grown sustainably within the single vineyard of Persegà, in the commune of Mariano di Valpolicella. Here the vines benefit from the altitude of 250 metres above sea level and the clayey-calcareous matrix of the soil. The bunches, harvested entirely by hand, undergo destemming and crushing, followed by 7-10 days of alcoholic fermentation in stainless steel vats in contact with the skins, with temperature control. The wine is then matured in old oak barrels for 12 months until final bottling.
On visual examination, Antolini's 'Persegà' Valpolicella Classico Superiore shows a luminous ruby red colour. Intense aromas of small red fruits and plums describe the olfactory profile together with sweet spicy nuances reminiscent of clove and vanilla. In the mouth it is fresh and savoury, soft and balanced, with a pleasant tannic texture accompanying the fruity finish. A Valpolicella Classico Superiore that pairs beautifully with savoury foods such as mature cheeses and roast meats, perhaps accompanied by mashed potatoes.
