VALPOLICELLA RIPASSO SUPERIORE 'ACINATICO' ACCORDINI 2021 DESCRIPTION

Accordini's Valpolicella Superiore Ripasso "Acinatico" knows how to combine to perfection the traits of complexity and richness of Amarone with those of pleasantness and easy-drinking of Valpolicella, showing a great ability in making and telling the story of its territory. There is a skilful union of loveliness and straightforwardness of drinking underlying Ripasso "Acinatico," named after the house Amarone. The lightened, youthful version of this blend of indigenous grapes has nothing to envy its older sibling, posing in a more everyday, lighthearted guise.

"Acinatico" Valpolicella Superiore Ripasso is composed of 60% Corvina Veronese, 20% Rondinella, 15% Corvinone and 5% Molinara. A distinctive feature of this type is the particular method of vinification, which involves the implementation of the so-called "ripasso." This technique consists in implementing a second maceration, with subsequent fermentation, in contact with the Amarone marc. The latter have completed the maceration phase related to the making of their wine but have not been pressed, bringing with them many characteristics derived from the long withering period and conferring them to Valpolicella Ripasso. For the Acinatico, the period of ripasso has a duration of 10 days and is maximized through pumping-overs performed daily. The vinification is concluded with an aging in French oak barriques for 12 months and a following aging in bottles for 6 months.

Accordini Valpolicella Superiore Ripasso is a wine with a deep ruby red color. The nose opens in aromas of red fruit, sweet spices, cocoa and coffee. The sip shows clear references to Amarone, through the body full and enveloping, endowed with blunt tannin and lively freshness in balance with the alcohol content. The taste persists in fruity aromas. "Acinatico" is a wine made for those who never want to miss anything.
