"Primo Fuoco" is a series that Fattoria di Sammontana dedicates to the earth, understood as the unavoidable home of the vine's roots and as the raw material from which to create necessary artefacts: in the vocabulary of artisans, it is the term used to indicate the first firing of clay, through which terracotta is formed, which can be transformed into different types of ceramics and majolica with subsequent firings. Bianco represents the Orange interpretation of pure Trebbiano.
Fattoria di Sammontana makes Bianco 'Primo Fuoco' from the indigenous variety that is the spokesperson for the entire Apennines: the selection of the best Trebbiano Toscano grapes comes from the estate's vineyards located in the Montelupo Fiorentino district, a town not far from Florence and nestled in the Chianti hills, a stone's throw from the Arno river that flows just to the north. The alluvial soils are characterised by the marked presence of gravelly and pebbly skeletons, elevated at altitudes between 70 and 150 metres above sea level and planted at a density of about 3,500 vines per hectare. The vines range in age from 30 to 50 years, grown under a certified organic system and following the principles of biodynamic agriculture implemented in 2012. Harvesting is completed by hand, while in the cellar, the indigenous yeasts proceed with spontaneous fermentation, with daily punching-down, in 500-litre terracotta amphorae: maceration in contact with the skins lasts for 3 months. After racking to remove the marc, the Bianco continues its maturation in amphorae for a period of 6 months. Bottling is carried out without filtration.
