In Carpesica, a small fraction of Vittorio Veneto on the green hills between Conegliano and Valdobbiadene, the home of Prosecco, in 2005 Cinzia Canzian leave the family business to create one of her own: the Vigne di Alice.
The intent of Cinzia, who worked in the company's administration, communications and marketing, is to produce a sparkling wine according to her understanding of this wine, with the Charmat method, because for her the name "sparkling wine" can be given only to those wines whose bubbles are produced by fermentation in closed containers.
In her five-hectare vineyard, Cinzia has implanted Prosecco, in other words Glera and a minimum of Vardiso, Boschera and Marzemino, but always with an eye to not upset the natural terroir of the vineyard, leaving many trees, thickets and simple shrubs; the ground that has a moraine origin, being calcareous and stony, mineral and lean together with a particularly favorable climate, provide the ideal habitat for the cultivation of vines.
For the production of sparkling wine is very important that the grapes have no traces of rot or the presence of slight mold, so the harvest is done by hand with a rigorous selection of grapes for winemaking.
The cellar, equipped with the latest equipment, including a horizontal press for a soft pressing of the grapes and large steel tanks, is the realm of her friend, winemaker of long experience, Francesca Bonicelli, which controls and directs with great expertise all the operations of winemaking. "Life is a bubble" is the motto of Cinzia…in fact, her delicious sparkling wine gives moments of lightheartedness and joy.
