Anne et Jean Francois Ganevat's Cotes du Jura 'Vin de Paille' is a truly sensational sweet wine from Savagnin grapes. It is made using the 'passerillage' technique, which consists of drying the grapes under the combined action of sun and wind before being aged for 18 months in oak barrels. This is how a 'Vin de Paille' comes to life, balanced between sweetness and freshness that evokes sensations of ripe and candied fruit such as almonds, figs and citrus fruits. The 'Vin De Paille' Cotes du Jura by Anne et Jean-François Ganevat is a dessert wine of sublime charm and expressive richness, made by an iconic producer who has become a benchmark for the entire artisanal wine movement of the Jura. In keeping with the tradition for Vin de Paille, literally 'straw wine', this nectar is made from grapes left to dry in special straw mats before vinification proper. During the drying period, the berries undergo a progressive dehydration, thus concentrating sugars and aromas.

The Cotes du Jura 'Vin de Paille' of the artisanal winery Anne et Jean-François Ganevat is produced from pure Savagnin grapes cultivated in accordance with the dictates of organic and biodynamic agriculture. In particular, the grapes come from very old vines planted on soils rich in white and grey marl. After the harvest, carried out entirely by hand with a scrupulous selection of the best grapes, the bunches are left to dry for a few months on special straw mats. This is followed by gentle pressing and then spontaneous alcoholic fermentation entrusted solely to indigenous yeasts, at the end of which the wine is left to age for 18 long months in oak barrels. Final bottling takes place without prior clarification and filtration, and no sulphites or other oenological additives are added throughout the entire process.

To the eye, the 'Vin de Paille' Anne et Jean-François Ganevat Cotes du Jura displays a straw-yellow hue tending towards golden. The rich, broad aromatic bouquet is defined by scents of almond, ripe grapes, candied lemon, caramelised figs and tropical fruit that blend with nuances of butter and sweet spices. In the mouth, it surprises with its exceptional balance of enveloping sweetness and decisive fresh-savoury shoulder, elements that define a long, soft and complex progression.
