LATRICIERES-CHAMBERTIN GRAND CRU DOMAINE ROSSIGNOL-TRAPET 2014 DESCRIPTION

Domaine Rossignol - Trapet's Latricières - Chambertin Grand Cru is produced in Gevrey-Chambertin, one of the most famous and vicariously important villages for viticulture on the Côte de Nuits in Burgundy. The winery was founded in 1999 by Jacques Rossignol, boasting numerous Grand Cru and Premier Cru vineyards. The working philosophy is aimed at preserving the ancient link between the terroir and the raw material, choosing to adopt an organic regime in order to accommodate the natural rhythms of growth and development of the plants and raw material.

The pure Pinot Noir grapes of the Latricieres - Chambertin Grand Cru of Domaine Rossignol - Trapet are grown on the hillsides where the climate is favorable for the grapes to ripen fully and the soil is mainly composed of limestone and clay with a minimal presence of marl and fossils that allow the Pinot Noir to express its peculiarities to the fullest, producing unique and quality wines. The harvest is conducted manually only when they have reached an excellent degree of ripeness: the grapes are placed in small crates and a sorting of the best berries follows. In the cellar, processing follows a slow pace: an alcoholic fermentation thanks to the action of indigenous yeasts; it ages 14-18 months in wooden barrels before being bottled.

The Latricières - Chambertin Grand Cru from Domaine Rossignol - Trapet presents itself in the glass of an intense ruby red with brilliant reflections. The bouquet of aromas is that of forest berries, dark-fleshed fruits with final sensations of toasted and spicy; on the palate it feels elegant and refined with a light and delicate presence of tannins balanced by the final freshness for an active and satisfying drink. It pairs perfectly with grilled and stewed red meat dishes, pasta with meat sauce and aged cheeses.
