A Castellina in Chianti trovia the Farm Casavecchia Square that sells its wines under the trademark Buondonno. Castellina in Chianti is perhaps one of the most iconic names in the production of Chianti Classico, and the company is one of the most talented producers of this great wine .. Gabriele Buondonno and Valeria Sodano, Neapolitan pure blood, bought the property in 1988 and since then devote themselves body and soul to the production, with organic farming, a Chianti at the highest level; in the farm are able to offer visitors a pleasant stay totally immersed in nature. The farm, located on the beautiful hills of Chianti, covers 20 hectares, eight of these are vineyards on a predominantly clay and limestone, made by draining solid foundation stone, with olive trees and the remaining four are covered with forest . Since 1992 the company has started the replanting of vines, 90% Sangiovese, with a small part of Canaiolo, Colorino, Merlot and Syrah. The cellar is equipped with all modern equipment for the production of wine, from large cement tanks and steel in which the fermentation with indigenous yeasts absolutely, in barrels of 225 liters and 500 liters tonneau where malolactic fermentation takes place; bottling is done simply to fall and the bottles rest for the final refinement, at a controlled temperature, for different periods for each type of wine. The Chianti Classico of this farm is one of the most representative of this area and has obtained the qualification of organic wine Triple A, as the operations in the vineyard and in the cellar are all executed with the utmost respect of nature, just as claimed by the same Gabriele "you have to enter on tiptoe in a natural environment to try to be the least invasive as possible."
