The Sylvaner of Abbazia di Novacella was born in a spectacular setting, that of an abbey of the Augustinian Order, founded by Blessed Artemanno in 1142. Located just a few kilometers from Bressanone in Trentino Alto Adige, today it presents itself as an active center aimed at education and cultural formation. Since the year of its foundation, the land around the Abbey has been devoted to viticulture, recognized even by Pope Alexander III as an invaluable source of excellent quality products. After secularization in the early nineteenth century, the monastery lost some land holdings, but from then until today local farmers are used to deliver part of the grapes grown at the Abbey so that they can be transformed into excellent wines.
Abbazia di Novacella's Sylvaner vineyards are situated between 650 and 750 meters above sea level in the Bressanone Basin. The soil consists mainly of moraine deposits with mycascist, paragneiss and quartzite for wines with a lively and structured character. The climate is cool and harsh in winter, with snowfall and cold winds even in the early spring; in summer heat and humidity take their toll, but the harvest nevertheless achieves good ripeness thanks to the sun's warm rays. The grapes are harvested by hand and in the cellar 3/4 of the must ferments in steel and refines here for a few months as well; the remaining 1/4 rests in oak barrels. A final aging of 6 months occurs with all the must in steel.
The color of Abbazia di Novacella's Sylvaner is a straw yellow with reflections tending toward greenish; the bouquet of aromas is broad and reminiscent of summer wildflowers, alfalfa and hints of ripe white-fleshed fruits such as pear and white melon. In the mouth it is rich, enveloping and elegant with an overall balance given also by the final freshness that draws the drinker in. In pairing it is excellent with dumplings and stuffed pasta with spinach, asparagus salad, shellfish and crustaceans. Quality wine to keep in one's personal cellar to share with loved ones, tasting in the glass all the quality of an experienced and respectful work of nature and the fruits it gives us.
