La Valdotaine is a small distillery located in the heart of the Aosta Valley, nestled among the magnificent Alpine mountains. This artisanal establishment stands out in the Italian wine and spirits scene thanks to its heritage and product quality. The distillery is renowned for its handcrafted copper stills, which operate in single batches to distill small quantities of unique spirits. The Aosta Valley, with its mineral-rich waters and breathtaking landscapes, provides an ideal environment for the production of high-quality distillates. For centuries, the region's inhabitants have expertly selected and cultivated the finest plant essences, transforming them into authentic Alpine specialties that tell the story and culture of the territory.

At La Valdotaine, vineyard and cellar work is guided by a careful philosophy that respects local traditions. The quality of the distillate begins with the meticulous selection of raw materials, stored in airtight containers to prevent undesirable alterations. The distillers use traditional steam stills that can hold up to 400 kg of pomace. The distillation process is slow, drop by drop, to preserve natural balance. After about four hours, nearly 15 liters of grappa are collected. During this process, the first part of the distillate is discarded, while the “Heart,” the most prized fraction, is collected, and the lower-quality “Tail” is eliminated. For particularly fine distillates, a vacuum bain-marie still is used, allowing a lower distillation temperature and preserving aromatic substances, enhancing the spirit’s bouquet. The distillery is committed to maintaining a clean and healthy environment, where herbs, roots, and other ingredients are collected and infused to produce unique liquors and spirits.

La Valdotaine is not just a place of production but also a guardian of Alpine traditions and the natural treasures of the Aosta Valley. One of its most fascinating features is “Acqueverdi,” a turquoise water spring located 1,400 meters up in the Vallone di Saint-Marcel. The incredible color of the water is due to the presence of rare minerals, and although it is located at a distance, a few drops of this "magical" water are used in the production of the distillates. Additionally, unusual botanical secrets gathered in the Vallone lend a distinctive character to the distillery’s products. Each distillate tells a story, the result of careful research and selection. Visitors to the distillery can discover the magic of these unique spirits and savor the different labels, available on the site, that express the authenticity and passion for high-quality production. La Valdotaine thus stands out as a beacon, carrying forward the legacy of an ancient and precious craft.
