MEZCAL 'TAMAULIPAS' DARRUMBES DESCRIPTION

The Mexican project Derrumbes presents Mezcal 'Tamaulipas', an agave distillate capable of highlighting one of the lesser known territories in the production of mezcal by delivering alabel with a rich and layered taste. This mezcal, belonging to the Joven category in that it is not aged in wood, comes from the state of Tamaulipas, specifically from the village of San Carlos, an area that unfortunately has significant crime problems, a factor that makes it unexplored. Derrumbes therefore offers the opportunity to enjoy a hedonistic experience in this area, interpreted by the skill of Maestro Mezcalero Cuahutémoc Jaques.

For the production of Mezcal 'Tamaulipas' from Derrumbes, a blend of the Americana, Unvittata and Funkiana agave varieties grown in the San Carlos area is made. Once ripe, the agave is harvested and cleaned to extract the sugary heart, locally called 'piña', which is then cooked in traditional underground stone ovens. The subsequent pressing operation is carried out mechanically and is followed by the spontaneous alcoholic fermentation of the sugary juice inside special steel containers. Once the fermentation process is complete, the liquid is distilled in discontinuous copper stills, followed by a 60-day resting period in the bottle before final release.

The 'Taumalipas' Derrumbes Mezcal has a crystal-clear appearance. The broad aromatic profile offers distinct peppery, almost pungent sensations, enriched by the typical hints of fresh agave of Joven mezcals. In the mouth, it is surprising for its ability to combine initial sweetness with a dry and particularly rich finish.
