Franz Haas' Schiava "Sofi" is a fragrant version of one of South Tyrol's most iconic wines. The indigenous Schiava grape variety has been cultivated in the region for centuries, and before the Bianchist revolution, it was the most widely planted grape variety. It is particularly prized for its fine and refined aromas and flavours and its light and convivial character. The delicate, low-extraction winemaking enhances the personality of Schiava by bringing the best varietal notes of fresh fruit to the fore. It is an atypical red wine, fresh and subtle, which goes very well with local cured meats, tomato-based pasta dishes, poultry and white meat main courses.
Schiava wine "Sofi" is made by one of South Tyrol's most famous vignerons. Franz Haas comes from a family that has been cultivating vineyards in the Montagna area for 7 generations. The estate covers a total of more than 50 hectares, divided into many plots located in the most suitable positions in the area. The grapes come from Schiava vineyards cultivated with the traditional Trentino pergola system, at an altitude of about 400 meters above sea level, on soils of morainic origin, rich in gravel. The fine exposures facing south and the cool climate, with strong>strong temperature fluctuations, give grapes fine and elegant aromas. After harvesting operations are completed, the grapes are destemmed and sent for fermentation in temperature-controlled stainless steel vats. Before bottling, the wine matures for five months in steel tanks.
The red Schiava "Sofi" is a label from the collection of wines that Franz Haas wanted to dedicate to his daughter. It is a new interpretation of the classic grape varieties of the area, in a young guise, with a fresh taste and pleasantly simple and immediate. In the glass, it is light ruby red, bright and almost transparent. Fruity and exuberant, it expresses aromas of wild strawberries, ripe cherries, red currants, raspberries and fresh almonds. The palate is light and flowing, with a very fine tannic texture and juicy, crisp fruit that satisfies the palate. The closure is fresh and savoury, with a finish that returns to harmonious fruity and delicately almondy notes.
