Cocchi's Alta Langa Brut 'Toto Corde' was born in Cocconato in the province of Asti. The winery has its origins thanks to Giulio Cocchi, a confectioner from Florence who decided to move to Asti at the end of the 19th century. In 1891 he opened his business, specialising in the production of aromatised and sparkling wines, Barolo Chinato and Vermouth. It soon became a well-known brand, so much so that between the two world wars it had more than 12 tasting points in Piedmont for its products; a few years later, it began exporting its products to America and Oceania. In 1978, the business was taken over by the Bava family, already a producer in the Monferrato area, who were able to modernise and innovate production techniques in order to continue marketing high-end products.
Cocchi's Alta Langa Brut 'Toto Corde' is the symbol of Piedmont's centuries-old tradition of the Metodo Classico and also the flagship label of the Cocchi winery. The vineyards are located to the right of the Tanaro river at an altitude of about 250 metres above sea level; the soil is mainly composed of marly stone, limestone and clay for wines with a strong and pungent character. The training system is the traditional low espalier with Guyot pruning. The grapes are harvested manually; in the cellar, the first fermentation takes place in steel for 3 weeks, after which the wine is kept cold to ensure sedimentation of the deposits. The cuvée is created at the end of winter by blending Pinot Noir and Chardonnay from the same harvest; the mousse is made in the dark for 4 years. The remuage is manual on wooden pupitres with dègorgement à la glace.
The colour of Cocchi's Alta Langa Brut "Toto Corde" is a beautiful straw yellow with brilliant reflections. The bouquet of aromas is reminiscent of candied citrus fruit, toasted hazelnut, caramel and freshly baked bread crust; on the palate it is fresh, balanced and enveloping with a freshness and savoury finish that entice you to drink it glass after glass. In pairing, it is recommended with cream canapés and smoked salmon and first courses with shellfish and molluscs; also perfect with seasonal vegetable dishes. Excellent to accompany toasts with work colleagues to celebrate important milestones or for romantic anniversaries, savouring the most hidden flavours of the Piedmontese land.
