"Anfora' by Casa Belfi is a sparkling white wine vinified in amphora with maceration on the skins and then re-fermented in the bottle. It has a deep yellow colour, with subtle veiling due to the yeasts in suspension. The aromas are fruity and floral and the taste fresh and lively, with good structure and great personality
Bianco Anfora di Casa Belfi is a sparkling white wine characterised by the almost ancestral use of the clay container as a fermentation vessel. A production choice pursued by the winery linked to environmental reasons and the wine's essentiality of expression.
The white grapes that make up this wine come from vineyards on medium-textured soils with a pebbly, well-drained subsoil. The philosophy pursued is both biodynamic and certified organic. The grapes are destemmed and placed in large terracotta amphorae. The vessel is active, not inert, and interacts with the wine mass, yielding certain characteristics that will be revealed on tasting. Inside the amphora, maceration on the skins takes place for about 7 days, followed by soft pressing and fermentation using only indigenous yeasts, without temperature control. It is bottled on flower days, according to Maria Thun's lunar calendar, and undergoes re-fermentation in the bottle. It is neither dosed, nor filtered, nor clarified.
The Bianco Anfora shows a very deep straw yellow colour with a subtle effervescence. The nose reveals rich, intense and slightly iodine-rich aromas of yellow fruit and citrus fruits balanced by nuances of bread crust. The palate is vibrant, rough, typical of maceration, but with great balance. There is excellent structure and the mineral sensation, due to the active contact with the amphora, softens and does not sting, giving pleasantness. The background guarantees longevity and softness to the wine.
