BARBARESCO RISERVA 'PAJÉ' PRODUTTORI DEL BARBARESCO 2019 DESCRIPTION

The Barbaresco Riserva "Pajé" from the Produttori del Barbaresco winery is an elegant, intense, and structured red wine produced on the magnificent and fascinating hills of Barbaresco, in Piedmont. This label is obtained from pure Nebbiolo grapes from the Pajé cru, which is a single vineyard located on a west-southwest facing hill at an altitude of about 250 meters. The vines, which are grown using the traditional espalier method with Guyot pruning, are planted on soils characterized by clay-limestone soils with sandy veins and bottoms. The winery is a historic cooperative of producers, owner of more than 100 hectares of vineyards cultivated following a rigorous classic expression and very strict rules, especially regarding phytosanitary treatments, which have ensured that the labels express a truly impressive character and uniqueness of aromas.

The "Pajé" Barbaresco Riserva from the Produttori is produced with carefully selected and hand-picked grapes, generally harvested towards the end of September or the first decade of October. The bunches are destemmed and softly pressed in the winery before undergoing alcoholic fermentation in stainless steel containers at a controlled temperature of 30°C with a maceration on the skins for about 28 days. This is followed by racking with pressing of the skins, after which the wine is transferred to large oak barrels where it undergoes malolactic fermentation and remains for at least 36 months before being bottled. After another 6 months of bottle aging, the "Pajé" is finally ready for commercialization.

The Produttori del Barbaresco's Barberesco Riserva "Pajé" has a beautiful deep ruby red color. On the nose, rich and delicate aromas of red fruit and berries appear, including cherry, raspberry, and currant, floral notes of rose and dried flowers, spicy hints of pepper, cinnamon, and anise, ending with balsamic and menthol notes. In the mouth, it is medium-bodied, decisive and refined, characterized by intense and spicy fruit and pleasant but well-present tannins. This wine from the Produttori del Barbaresco is a highly drinkable, complex, and refined red, capable of surprising with its clear and precise sensations and its incredible persistence.
